Pasta salad with basil, tomatoes and mozzarella

Recipe Ingredients for Pasta Caprese

16 oz whole wheat pasta
12 1/2 oz canned, chunk white chicken
4 cups summer squash, steamed
1 cup carrots, steamed
8 oz mozzarella cheese
1/4 cup chopped fresh basil
3 med tomatoes, chopped
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1/2 t salt
1/2 t pepper

Recipe Directions for Pasta Caprese

  1. Cook pasta until al dente.

  2. Chop carrots and squash into 1/2" chunks and steam until just soft. Don't overcook.

  3. Chop tomatoes and mozzarella into 1/2" pieces.

  4. Add the chicken, vegetables and cheese to the pasta and toss.

  5. Combine lemon juice and olive oil. Pour over salad and toss again. Add salt and pepper to taste.
