Recipe Ingredients for Pasta with Black-eyed peas, tomatoes and peppers

1 cup Crushed Tomatoes
10 cherry Tomatoes, Red, Ripe
1 medium Squash, Summer, Zucchini, Includes Skin
1 large Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.25 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup Black Eyed Peas, Organic
2 1tsp Olive Oil
2 cup Spaghetti, Whole-wheat, Cooked

Recipe Directions for Pasta with Black-eyed peas, tomatoes and peppers

  1. cook spaghetti according to pkg instructions

  2. sautee onion, peppers & zucchini and garlic till carmelized

  3. add tomatoes simmer till they give up juice

  4. add peas cook through

  5. add sauce cook through

  6. toss in spaghetti
