quick and delicious, very filling, can use with any type of pasta, eg penne, fusili, couscous

Recipe Ingredients for pasta with beans and basil

1 onion, chopped, large
3 garlic cloves, minced, large
1 tbsp olive oil
28 ounce tomatoes, unsalted, whole
2 tsp basil, dried
1/2 tsp table salt
1/4 tsp black pepper
19 ounce kidney beans

Recipe Directions for pasta with beans and basil

  1. Saute onion and garlic in olive oil, about 5 mins

  2. Add diced tomatoes, 1/2 cup chopped fresh basil or 2 tsp dried basil, 1/2 tsp salt and 1/4 tsp pepper. Bring to boil.

  3. Stir in 19-oz can kidney beans. Reduce heat to low and simmer, uncovered and stirring often, until thickened.

  4. Optional

  5. Toss with 1 lb (454 g) cooked penne or fusili and 1/4 cup grated Parmesan.

  6. Serves 6 to 8
