Recipe Ingredients for Pasta and Bean soup

6 c chicken broth
12 oz kidney beans
1 c macaroni
1 c diced canned tomatoes
1 carrot, chopped
1 celery stalk, chopped
1 onion, chopped
2 garlic cloves, minced
1/2 tsp salt
2 T olive oil
1 pinch red pepper flakes

Recipe Directions for Pasta and Bean soup

  1. Combine half the kidney beans with 1/2 C stock. Puree in blender or food processor.

  2. Heat oil over medium heat. Cook onions, carrot, celery, garlic, and pepper flakes until onion is soft, about 10 minutes.

  3. Add tomatoes and salt, and cook for 10 minutes.

  4. Add kidney beans and puree, and cook for 3 minutes.

  5. Add remaining broth. Bring to boil, and then add macaroni. Cook until pasta is al dente.
