Recipe Ingredients for Pasta, Barbara's Best

2 pounds dry pasta
8 ounces fresh baby spinach, chopped
1/2 pound zucchini, quartered and sliced
1 large onion, chopped
4 cloves garlic, sliced thin
1 pound ham, cut in 1/4 inch cubes
32 ounces tomatoes
15 ounces tomato sauce
2 ounces cream
1/2 cup parmesan cheese
2 teaspoons salt
2 teaspoons pepper
8 ounces sun dried tomatoes, plumped in microwave
2 tablespoons olive oil
1 large bell pepper, sliced
7 ounce mushrooms, fresh or canned

Recipe Directions for Pasta, Barbara's Best

  1. In a large skillet place the olive oil and ham and cook thourghly, add onion, garlic, bell pepper and saute.

  2. Add tomatoes, tomato sauce, mushrooms, salt and pepper.

  3. Just before finishing the sauce add the cream and parmesan cheese.

  4. Cook pasta in salted water for 5 minutes, add spinach and zucchini and cook for another 3 minutes or until pasta is dente drain water.

  5. Place cooked pasta on plate and top with sauce.

  6. Add more cheese on top if desired.
