Recipe Ingredients for Pasta: Baked Ziti with Sausage


For the sweet Sausage Sauce:
3/4 lb. sweet Italian sausage, ground
28 oz. crushed tomatoes
1 medium onion, chopped
6 oz. mushrooms, chopped
1 medium zucchini, diced
3 cloves of garlic, minced
2 T. tomato paste
1 Salt, to taste
1 Pepper, to taste
1 T. Italian seasoning (basil, oregano)

For the Baked Ziti:
13 1/2 oz. whole wheat pasta (ziti or penne)
8 oz. part skim ricotta cheese
1 egg
3/4 lb. mozzarella cheese (shredded or cut into pieces)
1 T. dried parsley
1 Salt, to taste
1 Pepper, to taste

Recipe Directions for Pasta: Baked Ziti with Sausage

  1. In a large pot, cook the ground sausage, making sure to break up the meat as it browns. Drain.

  2. Add the chopped onion, garlic, mushrooms, zucchini, and a pinch of salt and sauté until tender.

  3. Stir in crushed tomatoes, tomato paste, salt, pepper, and Italian seasoning.

  4. Bring the sauce to a boil and then cover, reduce heat to a simmer for about 45 minutes, stirring occasionally.

  5. Preheat oven to 375F.

  6. Cook ziti pasta in large pot of salted water, according to package directions. Strain the pasta and put it directly into the pot with the sweet sausage sauce.

  7. In a small bowl, add egg, ricotta cheese, salt, pepper and dried parsley. Mix together well.

  8. Add the ricotta mixture and ˝ of the mozzarella cheese to the pasta/sauce pot. Mix together very well.

  9. Spray a large baking dish with cooking spray, add the pasta mixture. Sprinkle the remaining mozzarella cheese on top.

  10. Bake, uncovered, for 45 minutes to 1 hour until hot and bubbly. Serve hot.
