Pasta with Arugula Recipe

Delightful for spring. Fantastic with the addition of red pepper flakes.

Recipe Ingredients for Pasta with Arugula

1 lb arugula
8 oz Spaghetti, Whole-wheat, Dry
2 tbs olive oil
1/4 cup vegetable broth
4 oz Baby Bella
6 cloves garlic
1 garlic salt to taste
1 pepper to taste

Recipe Directions for Pasta with Arugula

  1. Cook pasta per directions on the packaging.

  2. As the noodles cook, sautee the sliced baby bella mushrooms in the vegetable broth (I like to use imitation chicken stock) -- add 1 chopped garlic clove, sprinkle with garlic salt and cook until most of the liquid evaporates and the mushrooms are tender. Set aside.

  3. Add olive oil to the pan (I don't bother cleaning it after cooking the mushrooms), and heat -- add the remaining garlic cloves (chopped or slices) and heat on low to medium until softened and fragrant.

  4. Drain the noodles and toss with the garlic oil. Add the mushrooms and stir until thoroughly combined.

  5. The noodles should be lightly cooled before stirring in the arugula, topping with salt and pepper to taste (try it first -- with the broth and garlic salt, this is probably good on seasoning) -- once all is thoroughly combined, serve warm or cooled.
