Classic Italian dish. Eggs, cream & bacon.

Recipe Ingredients for Pasta alla Carbonara

200 g smoked bacon in cubes or strips
1 large onion
4 cloves of garlic
4 tbsp whipping cream
4 tbsp parmigiano reggiano
4 tbsp olive oil
4 eggs
1/2 cup of white wine (can be omitted)
250 g of pasta, for instance tagliatelle
1 salt, pepper & nutmeg to taste

Recipe Directions for Pasta alla Carbonara

  1. Mix the egg (whites and yellow), nutmeg, pepper, parmisan and cream - do not add salt here. Let the mix rest for a bit.

  2. Chop the onion and garlic.

  3. Heat the olive oil in a pan and fry the bacon until it's nice and crisp, not too dark.

  4. Add the onion and garlic and fry until they are golden. Add white whine if availble and let it fry until it's almost evaporated.

  5. Remove the bacon/onion mix from the heat.

  6. Boil the pasta just before it reached al dente and then drain it.

  7. Mix it with the egg mix over very low heat until the egg is no longer raw.

  8. Pour the bacon/onion mix over (including liquids) and mix it.

  9. Ready to serve. Enjoy.
