This is a meal that is typically considered 'unhealthy', but with some changes, you can make it a lot healthier. A whole grain pasta with an alfredo sauce, topped with veggies!

Recipe Ingredients for Pasta Alfredo

1/2 lb. pasta
1/4 c. part-skim ricotta cheese
1/4 c. parmesan cheese
1 tbsp. olive oil
8 oz. mushrooms
8 oz. bell peppers

Recipe Directions for Pasta Alfredo

  1. When the pasta is cooked to taste, drain and return to the pot.

  2. While pasta is cooking, use a the olive oil to cook the mushrooms and peppers until cooked.

  3. Add the remaining ingredients, seasoning to taste with salt and pepper.

  4. Toss well to mix.
