Pasta with Black Olives and Broccoli

Recipe Ingredients for Pasta Aglio Skinnier

5 oz whole wheat pasta , uncooked
3 cups broccoli, fresh
28 large black olives
1/2 cup parmesan cheese
1 tbsp olive oil
1/2 cup chicken broth
6 cloves garlic

Recipe Directions for Pasta Aglio Skinnier

  1. Directions

  2. cook rotini as per package directions.

  3. halve the olives

  4. par cook the broccoli until slightly tender but still crunchy(5 minute in microwave)

  5. chop garlic fine.

  6. Sautee garlic and olives in olive oil until garlic is tender about 5 minutes.

  7. Add brocooli sautee another 2 minutes

  8. Add broth cover and simmer on low for about 7-10 minutes depending how soft you like broccoli.

  9. Add 1/2 cup of parmesan to brocoli mixture and stir well.

  10. Pour over drained pasta.

  11. Add remaining 1/4 cup of Parmesan and toss together well.

  12. Serve immediately!
