Recipe Ingredients for Passover matzo muffins

1 lb. Jerusalem Matzo Farfel
10 large eggs
1/3 cup olive oil
1 tablespoon salt
1 teaspoon onion powder
1/2 teaspoon pepper

Recipe Directions for Passover matzo muffins

Pour 4 cups boiling water over matzo and let stand for a few minutes. Beat eggs with olive oil and seasonings. Stir into the softened matzo. Grease 24 muffin tins. Fill tins with mixture. Bake in a 400 F oven for 45 minutes or till golden and puffed. Remove to racks to cool.
