Passover Flax-Blueberry Muffins Recipe

A nice alternative for breakfast. Use ground walnuts if you don't have flax. NOTE: You can use flax seed for Passover, BUT you must carefully check the seeds before Passover for any foreign matter or seeds. I use a coffee grinder to grind the seeds, which works great. This has a lot of healthy oils.

Recipe Ingredients for Passover Flax-Blueberry Muffins

2 tbsp grapeseed oil
1/4 c ground walnuts
3 tbsp flax seed (ground)
3/4 cup sugar
2 eggs
1 1/4 cups applesauce
100 g matzo meal (3/4 c) (whole wheat if available)
120 g potato starch (1/2 c)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1 c frozen blueberries

Recipe Directions for Passover Flax-Blueberry Muffins

  1. Preheat oven to 350 degrees.

  2. Coat muffin pan with cooking spray, line with paper liners, or use good quality non-stick bakeware

  3. Beat oil, ground flax and sugar together

  4. Add eggs, one at a time.

  5. Add applesauce and combine.

  6. In a separate bowl, combine matzo meal, walnuts, potato starch, baking powder, baking soda and cinnamon,ginger and salt. Blend well.

  7. Combine dry mix with applesauce mixture. Do not over-mix.

  8. Fold in frozen (not thawed) or fresh blueberries

  9. Fill prepared muffin tins with batter.

  10. Bake for about 18 minutes until tops are brown and toothpick inserted in center comes out with moist crumbs.
