Here's a perfect party pasta. It's easy to make and colorful.

Recipe Ingredients for Party Pasta Salad

8 oz pasta, dry
15 oz black-eyed peas, drained & rinsed
2 cups corn, cooked
1 cup snow peas, trimmed, halved & briefly steamed
1/2 medium red bell pepper, cut into narrow strips
2 scallions, thinly sliced
1/2 cup vinaigrette
1/2 cup parsley, finely chopped

Recipe Directions for Party Pasta Salad

  1. Cook the pasta in plenty of rapidly simmering water until as dente, drain and rinse under cool water, then drain well again.

  2. Combine the cooked pasta with the remaining ingredients in a serving bowl and toss.

  3. Add the dressing and toss again, cover and refrigerate until needed or serve at once.
