Lightly spiced soup. As a variation, use parsnip and apple in equal proportions.

Recipe Ingredients for Parsnip Soup

2 lb Parsnips
1/4 cup butter
1 onion, chopped
2 cloves garlic, crushed
2 tsp cumin, ground
1 tsp coriander, ground
2 pints chicken stock
2/3 cups light cream
1/4 tsp salt
1/4 tsp black pepper

Recipe Directions for Parsnip Soup

  1. Peel and thinly slice the parsnips.

  2. Heat the butter in a large pan, add the parsnips, chopped onion and garlic.

  3. Cook until softened but not colored, stirring occasionally

  4. Add the ground cumin and ground coriander to the vegetable mixture and cook, stirring, for 1 - 2 minutes.

  5. Heat the chicken stock and then gradually blend it into the vegetables and mix well.

  6. Cover and simmer for about 20 minutes or until the parsnip is soft.

  7. Puree the soup, adjusting the texture with extra stock or water if it seems too thick.

  8. Check the seasoning and adjust to taste.

  9. Add the cream and re-heat without boiling.

  10. Serve immediately with chopped chives or parsley and/or croutons to garnish.
