Parsnip soup with orange and ginger

Recipe Ingredients for Parsnip soup with orange and ginger

800 g parsnip
200 g carrot
1 onion, diced
1 leek, sliced
2 tbsp salt
4 tbsp ginger
250 g orange juice
1500 g water
4 tbsp olive oil
1 tbsp green pepper, ground

Recipe Directions for Parsnip soup with orange and ginger

  1. First make onion and leek (may add some garlic, too) on olive oil (actually 2 tbsp should be enough with a good utensil) for about 5 minutes.

  2. Add sliced parsnip, carrot, ginger (best freshly grated, 4 tbsp is not too much!), orange peel, salt, pepper, 1,5 liter water, cook in slightly boiling water for about 40 minutes.

  3. Make a puree, add orange juice, and enjoy.

  4. Actually, recipe says that the quantity of parsnip vs carrot may be varied.
