A healthier way of making risotto

Recipe Ingredients for Parsnip Risotto

1 c. arborio rice
1 c. parsnips, chopped
1/2 medium onion, chopped
1 c. yam, cubed
1 tsp unsalted butter
1 tsp olive oil
1 tbsp fresh rosemary, chopped
1 clove garlic, minced
1 tsp fresh black pepper
1 c. low salt chicken broth
2 c. water
1 tbsp parmesan cheese, grated

Recipe Directions for Parsnip Risotto

Melt butter with olive oil in large pan on med heat. Add chopped onion, yam & parsnip and saute about 7 minutes. Add rice, garlic and rosemary, saute another 3 minutes then reduce heat to med-low. Add 1/2 c of stock, stir till evaporated, add other 1/2 c of stock; when that is almost dry add 1/2 c of water. Continue until all liquid added. Rice should be soft with a thick, creamy consistency. If too thick or dry, add more water until desired consistency is reached. Stir in parmesan and season to taste.
