Recipe Ingredients for Parsnip, Carrot, Leek and Ginger Soup

2 1/2 cups parsnips
2 1/2 cups carrots chopped
2 tablespoons fresh ginger
2 cups leeks
2 tablespoons olive oil
5 cups low sodium chicken broth
1 1/4 cups white wine

Recipe Directions for Parsnip, Carrot, Leek and Ginger Soup

  1. In a pot, cook leeks and ginger until softened.

  2. Add parsnips and carrots. Cook 7-8 minutes until they start to get soft.

  3. Pour in broth and wine. Bring to a boil, lower heat and simmer for about 20-30 minutes until the vegetables are soft/tender.

  4. Remove from heat and place in blender. Blend until smooth. Serve!
