Parsnips with carrots, celery, garlic, and barley. Serve with bit of shredded parmesan.

Recipe Ingredients for Parsnip Barley

2 cups barley
28 ounces vegetable broth
4 cups parsnips
1 cup carrots
4 cups celery
3 tablespoons garlic
1 tablespoon olive oil

Recipe Directions for Parsnip Barley

  1. Combine barley and vegetable broth and about 1 cup water in pan, bring to boil, simmer until tender, remove from heat.

  2. Separately saute vegetables in large pot with olive oil until tender, add salt to taste.

  3. Mix barley into large pot, mix to combine well. Serve with parmesan sprinkle on top.
