Recipe Ingredients for parsnip and apple soup

1 tbsp olive oil
10 g butter
1/2 spanish onion
1 clove garlic
2 tsp mild curry powder
1 kg parsnips
1 cooking apple
1000 g vegetable stock
2 tbsp lemon juice
6 tbsp single cream

Recipe Directions for parsnip and apple soup

  1. heat oil and butter, saute onion garlic and curry. add parsnips and season. fry for 5 mins until parsnips are golden.

  2. add the apple, stir, pour in the stock and bring to boil. simmer 12 mins until tender. remove from heat and cool for a few minutes. blend until smooth and creamy.

  3. pass through a sieve, rinse out blender with 100ml hot water and add to pan, stir.

  4. reheat gently, stir in cream and lemon juice.
