Potatoes sauteed with onions and garlic, topped with parsley.

Recipe Ingredients for Parsley Potatoes

4 russet potatoes
1 onion, chopped
4 cloves garlic, crushed
1 cup chicken broth
1 cup chopped fresh parsley
1/2 teaspoon ground black pepper

Recipe Directions for Parsley Potatoes

  1. Saute onion and garlic with Pam for 5 minutes, or until tender. Add potatoes and saute for another few minutes.

  2. Pour in broth and 3/4 cup of the parsley; mix well. Bring to a boil; then reduce heat. Simmer covered on low-medium for 10 minutes or until the potatoes are tender.

  3. Remove potatoes with a slotted spoon to a serving bowl. Sprinkle black pepper and salt on potatoes, and top with remaining parsley.
