This very healthy and sauce-filled stew makes a nice light lunch or dinner.

Recipe Ingredients for Parsley, Butter Bean and Cherry Tomato Stew

1 tbsp olive oil
1 red onion, chopped
150 g courgette
2 garlic cloves
1 tsp Ginger Root
20 cherry tomatoes
1/2 tsp sugar
14 oz Lima Beans
1/2 tsp ground cinnamon
1 tsp paprika
10 g Italian parsley
1/2 tsp sugar

Recipe Directions for Parsley, Butter Bean and Cherry Tomato Stew

Heat the oil in a large frying pan over medium heat. Add the onion, peppers, garlic and ginger and cook for 10 minutes, or until the onions are golden and soft. Stir in the saffron threads, then tomatoes, and sugar, and cook for 5 minutes. When the tomatoes are heaed through, add the butter beans, cinnamon and paprika. Season with pepper and sprinkle over the parsley. Serve with pita bread for mopping up the juices... or even couscous!
