Parsley Tomato Penne from Fresh 20

Recipe Ingredients for Parsely Tomato Penne

2 tsp Salt, Table
21 oz dry Whole Wheat Penne
1 tbsp Extra Virgin Olive Oil
1/4 tsp Pepper, Black
2 cup, chopped or sliced Tomatoes, Red, Ripe
1 clove Garlic
1/4 cup Parsley

Recipe Directions for Parsely Tomato Penne

  1. Boil water with salt, add pasta and cook for 8-10 minutes (until al dente). Drain reserving 1/4 cup pasta water.

  2. Return pasta to hot pot and toss with olive oil, pepper, tomatoes, garlic, parsley .

  3. Add reserved pasta water one Tbs at a time to create creamier sauce.

  4. Salt and Pepper to taste.

  5. Serve with roasted broccoli and lemon ricotta
