Recipe Ingredients for Parmigiana - Eggplant with cheese - light

350 g eggplant
500 g tomato sauce
250 g mozzarella
20 g Parmesan cheese
30 g breadcrumbs
10 g basil
20 g garlic
8 g salt

Recipe Directions for Parmigiana - Eggplant with cheese - light

  1. Grill the eggplants in slices (I grill several pounds of them when they are in season and freeze to have them ready when needed).

  2. Boil the tomato sauce with chopped garlic, add lots of basil and some salt.

  3. Slice the mozzarella cheese, or reduce it to strings by hand.

  4. Take a pan you use for the oven, cover the bottom with some boiled sauce, then add a layer of eggplant, some salt, a layer of mozzarella, layer of boiled sauce, another layer of eggplants, and then either repeat or finish with some grated Parmesan cheese and breadcrumbs.

  5. Bake in a hot oven for about half an hour, turning it around at 15 minutes.
