Recipe Ingredients for Parmesean Chicken

32 oz boneless skinless chicken breast
2 tbsp vegetable oil
1 c flour
1 tsp pepper
2 eggs
1/3 c water
3/4 c bread crumbs
2/3 c parmesean cheese
15 oz tomato sauce
1 tsp garlic powder
1 tsp basil
2 tsp italian seasoning
1 c mozzarella cheese

Recipe Directions for Parmesean Chicken

  1. Cut chicken into 4oz pieces , rinse and trim fat

  2. Mix flour and pepper together in a plastic bag

  3. In a bowl, mix the eggs and water together

  4. Combin bread crumbs and parmesean in another plastic bag

  5. Coat chicken pieces with flour mixture, then coat with egg and finally shake well in the bread and parmesean mixture. Brown over med-high heat in oil (oil may be omitted).

  6. Mix tomato sauce and seasonings together well and pour 2/3 of the sauce on the bottom of a 9x13 baking dish. Place the browned chicken in the baking dish and sprinkle mozzarella cheese over each piece. Pour remaining tomato sauce over the chicken.

  7. Bake at 375 degrees for 30 minutes.
