An American classic, meatloaf gets a nutritional update when made with turkey cutlets. Fat free milk and egg white. Leftover are delicious served with a cold vegetable salad.

Recipe Ingredients for Parmesan-Turkey Meatloaf

1 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
20 oz ShadyBrook Farms Turkey Breast Cutlets
4 slice Nature's Own Double Fiber Wheat Bread
1/2 cup Fat Free Milk
1 large Egg, White
3 tbsp Ketchup, Low Sodium
2 tbsp Parmesan, Grated Cheese
1/2 tsp Garlic Powder
1/2 tsp, ground Basil, Dried
1/2 tsp, leaves Thyme, Dried
1/4 tsp Black Pepper

Recipe Directions for Parmesan-Turkey Meatloaf

  1. Preheat the oven 350 F; spray an 8 x 5" loaf pan with nonstick cooking spray. In a small non-stick skillet, heat the oil. Saute the onion until tender, 4-5 minutes.

  2. In a medium bowl, combine the onion, turkey, bread crumbs, milk, egg white, ketchup, cheese, garlic powder, basil, thyme and pepper; blend well. shape into a loaf and transfer to the pan. Bake until browned and cooked through, 50-60 minutes. Let stand 10 minutes before slicing.
