Parmesan cheese and sun dried tomato risotto

Recipe Ingredients for Parmesan Tomato Risotto

2 cups chicken stock
3 teaspoons oil packed sun dried tomatos
1/8 onion
1/3 cup arborio rice
3 tsp shredded parmesan cheese

Recipe Directions for Parmesan Tomato Risotto

  1. Heat the chicken stock. While the stock is simmering, drain the tomatos and reserve the oil. Chop the tomatos coarsely and set them aside.

  2. In a large frying pan, heat 2 tsp of the oil from the tomatos. Add the onion and sautee until transleucent.

  3. Add the rice to the frying pan and stir until white spots appear in the center of the grains. Spoon a ladelful of stock into teh pan and cook on low until the stock is absorbed. Continue adding the stock, one ladel at a time, buntil the rice is tender and the mixture is creamy.

  4. Add the cheese, tomatos, 1 tsp of the remaining oil, basil, and salt and pepper to taste. Mix well and serve.
