Light tilapia breaded - pairs well with brown rice or pasta and steamed vegetables

Recipe Ingredients for Parmesan tilapia

32 ounce tilapia filets
1 cup bread crumbs
1 1/2 tbsp grated parmesan cheese
2 tsp rosemary
1 tbsp extra virgin olive oil
1/2 cup sun dried tomatos

Recipe Directions for Parmesan tilapia

  1. Combine bread crumbs and parmesan cheese and mix well

  2. In a shallow dish, lightly coat the fish with olive oil and dredge in the breadcrumb/cheese mixture. Arrange in one layer in a baking pan and top with tomatos and rosemary. Bake at 350 for approx. 22 minutes or until fish flakes easily with a fork.
