This makes a tasty complement to fish, or a balanced vegetarian main dish. If you don't have good fresh tomatoes available, about a 1/4 c of sundried tomatoes is a great substitute.

Recipe Ingredients for Parmesan Swiss Chard Sautee

2 tbl butter
1 tbl minced garlic
1 small red onion, diced
4 c. swiss chard, stems and ribs cut out and diced, leaves coarsely chopped
4 roma tomatoes, diced
15 oz garbanzo beans
6 oz canned mushrooms, with liquid
1/4 c. water
1 tbl fresh lemon juice, to taste
3 tbl grated Parmesan cheese
1/2 tsp salt

Recipe Directions for Parmesan Swiss Chard Sautee

  1. Melt butter in a large skillet over medium-high heat.

  2. Sautee garlic and onion about 1-2 minutes.

  3. Add the chard stems, tomatoes, beans, mushrooms and water. Simmer until the stems begin to soften, about 5 minutes.

  4. Gently mix in the chard leaves, and cook until wilted.

  5. Add lemon juice and Parmesan cheese, stirring.

  6. Salt to taste.
