Recipe Ingredients for Parmesan-Seared Chicken with Tangy Tomato Dipping Sauce and Twice-Baked Potatoes with Cheddar and Bacon

4 baking potatoes (Idaho)
4 slices turkey bacon
1 cup light sour cream
1/2 cup shredded Cheddar
1 pound boneless and skinless chicken
1 tablespoon Dijon mustard
1/2 cup grated Parmesan
8 ounce tomato sauce
1/2 teaspoon chili powder
1/2 teaspoon hot sauce
1/4 teaspoon ground black pepper

Recipe Directions for Parmesan-Seared Chicken with Tangy Tomato Dipping Sauce and Twice-Baked Potatoes with Cheddar and Bacon

  1. Preheat oven to 400 degrees F.

  2. Twice Baked Potatoes:

  3. Chopped and cook bacon until crispy.

  4. Bake potatoes for 1 hour, until tender.

  5. When cool enough to handle, cut each potato in half lengthwise, scoop out flesh, leaving a 1/4-inch shell and transfer flesh to a large bowl.

  6. Add bacon, sour cream and Cheddar and mix until blended.

  7. Season, to taste, with salt and black pepper.

  8. Spoon mixture back into the shells and discard any remaining shells.

  9. Sprinkle with a little more shredded Cheddar.

  10. Arrange stuffed shells on a baking sheet (or refrigerate until ready to bake).

  11. Bake 20 minutes, until golden brown.

  12. If desired, top with chives before serving.

  13. Chicken:

  14. To make chicken strips, cut chicken into strips and coat chicken all over with Dijon mustard.

  15. Place Parmesan in a shallow dish or plastic bag, add chicken and turn (or shake bag) to coat.

  16. Heat a large skillet coated with a non-stick cooking spray over medium heat.

  17. Add chicken and cook 5 minutes per side, until cooked through.

  18. Tomato Sauce:

  19. In a small saucepan, combine tomato sauce, chili powder, hot sauce, and black pepper.

  20. Set pan over medium heat and bring to a simmer.

  21. Serve chicken with sauce and baked potatoes on the side.
