Recipe Ingredients for Parmesan Risotto

14 oz chicken broth, no salt added
1 c water
2 T Light Buttery Spread with Flax Oil
1/4 c onion, fine dice
1/4 c green pepper, fine dice
1/8 c carrot, grated
1/2 c orzo
1/2 c arborio rice
1/2 c parmesan cheese
1 T No Salt Added Chicken Seasoning

Recipe Directions for Parmesan Risotto

  1. In small saucepan heat broth and water, bring to boil and let simmer.

  2. In lrg saucepan melt 2 T oleo, add onion and seasonings. Cook, stirring occasionally,til onion is softened; 4-5 minutes. Add orzo and cook til browned, stirring constantly: about 5 minutes. Add 1/2 c hot liquid and rice, cook stirring occasionally til absorbed; 3-5 minutes.

  3. Add broth in 1 c increments and simmer over medium low heat, stirring occasionally til liquid is mostly absorbed. Continue adding broth 1 c at a time allowing each to be absorbed, until rice is creamy and just tender; 20-25 minutes, total.

  4. Remove from heat and stir in cheese. Seasom w/ pepper.
