A flavorful baked boneless skinless chicken strip.

Recipe Ingredients for Parmesan/Oatmeal Chicken Strips

2 pounds boneless skinless chicken breast
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/3 cup flour
3 egg whites
1/2 cup bread crumbs (measure 1 cup)
1/4 cup quick oats (measure 1/2 cups)
1 1/2 tbsp Parmesan cheese (measure 3 Tbsp)
1 tsp basil, dried
1 tsp oregano, dried
3 tbsp olive oil

Recipe Directions for Parmesan/Oatmeal Chicken Strips

  1. Combine 1 cup bread crumbs, 1/2 cup oatmeal, 3 Tbsp Parmesan cheese, and the oregano and basil. (This is the coating. You will only use about half. Why count the calories that you will throw away?)

  2. Cut each chicken breast into three or four pieces. Sprinkle with salt, pepper, and paprika.

  3. Coat with flour.

  4. Dip into egg whites.

  5. Cover with bread crumb mixture.

  6. Coat baking dish with 2 Tbsp olive oil.

  7. Drizzle with remaining oil.

  8. Cover with foil and bake at 350 degree oven half an hour.

  9. Remove foil and bake for another 20-30 minutes. (Check with a thermometer.)
