This is a yummy version of mashed potatos and has low calories too! So fast and easy to make. You can use more spread , just add it to your day, but it is delish without more.

Recipe Ingredients for Parmesan Mashed Potatos With Skins

2 lbs potatos
1/2 cup buttermilk
1/2 cup skim milk
4 tbsp grated parmesan
1 tbsp brummel and brown

Recipe Directions for Parmesan Mashed Potatos With Skins

  1. Dice potatos in smaller chunk size pieces. Place in pot and cover with water.Bring to a boil, reduce heat until tender, about 10 min.

  2. While potatos are heating place buttermilk and skim milk on small pot over a low heat. Careful not to boil, or the milk will curdle. Just warm it up.

  3. Drain the potatos, add warm milk and mash together. ( This is where I use my mixer to get a semi- smooth mix, don't overdo it) Stir in cheese. Top with Brummel spread and let it melt.
