Moist, baked fish w/a slightly crunchy coating. Can use for catfish, trout, etc.

Recipe Ingredients for Parmesan fish

1 lb trout
1/2 c flour
1/4 c parmesan cheese
3 tbl cornmeal
1 tsp paprika
1/4 tsp salt
1/4 tsp pepper
1 egg white
1/4 c skim milk

Recipe Directions for Parmesan fish

  1. combine dry ingredients in shallow dish

  2. beat egg white with milk in another shallow dish

  3. dip fish fillets in milk mixture, then in flour mixture

  4. bake, uncovered, at 350 for 35-40 minutes
