Recipe Ingredients for Parmesan-crusted chicken w/ mushroom-veggie saute

4 tbsp extra virgin olive oil
12 oz chicken breast
1/2 c freshly shredded parmesan
2 c portobello mushrooms, thinly sliced (from approx 2 caps)
1/4 c shallot, finely chopped
2 garlic cloves, chopped
20 asparagus spears, chopped to 2-in length
2 tbsp red wine vinegar
1/2 c chicken broth

Recipe Directions for Parmesan-crusted chicken w/ mushroom-veggie saute

  1. Heat a large nonstick skillet over medium to medium-high heat with 2 tbsp EVOO. Season both sides of chicken breasts with salt & pepper. Dump cheese onto a plate and press chicken into cheese, covering with cheese on both sides.

  2. Add chicken to hot skillet, allowing it to cook 6-7 minutes - DON'T MESS WITH THE BIRD! After 7 minutes (or when the chicken budges easily) turn and cook the chicken 5-6 minutes more.

  3. While the chicken is browning, heat another large skillet over high heat with 2 tbsp EVOO.

  4. Add mushrooms and season with pepper. Brown the mushrooms for 3 munites. Season the mushrooms with salt and add shallot & garlic. Cook for 2 minutes, stirring occasionally. Add asparagus, tossing to combine. Add the vinegar & continue to cook until the skillet is almost dry, about 1 minute. Add chicken broth andn cook 3 minutes or until asparagus is tender.
