Use whole wheat bread crumbs. I use seasoned whole wheat stuffing mix and blend into crumbs.

Recipe Ingredients for Parmesan crusted chicken breasts

1 pound boneless skinless chicken breast
1/3 cup bread crumbs
1/3 cup grated parmesan cheese
2 t. olive oil
1 egg
1/3 cup water

Recipe Directions for Parmesan crusted chicken breasts

  1. Beat egg and water with wire whisk.

  2. Combine bread crumbs and cheese.

  3. Put each chicken breast in egg.

  4. Coat chicken with crumb mixture.

  5. Bake at 375 degrees for 20 minutes.

  6. Put under broiler for a few minutes to brown.
