3/4 cup bread crumbs
1/4 cup egg substitute

  1. grate parmesan and mix with bread crumbs on wax paper

  2. pound out chicken breasts to even thickness

  3. salt and pepper chicken, dip quickly in egg substitute, then in parmesan and breadcrumb mixture to coat

  4. bake in shallow dish at 425
