Recipe Ingredients for Parmesan Couscous

1 1/4 cup chicken stock
3/4 cup couscous
1/4 cup parmesan cheese, grated
3 tablespoon toasted pine nuts, optional
2 teaspoons lemon zest

Recipe Directions for Parmesan Couscous

  1. In a medium saucepan, bring stock to a boil.

  2. Gradually, stir couscous, cover, and let stand for 5 minutes.

  3. Using a fork, fluff couscous and stir in cheese, parsley, nuts and zest.

  4. Season with salt and pepper, serve.
