Parmesan Chicken Recipe

A classic, lightened up. shown in 3 oz servings before cooking. Cutting chicken breasts in half, makes 8 pieces about 3 oz. each.

Recipe Ingredients for Parmesan Chicken

3 tbsp. Dijon Mustard
1 tsp. white wine vinegar
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
24 oz. skinless, boneless chicken breast halves (scant 2 lbs)
1 1/2 English Muffin
3/4 cup Parmigiano-Reggiano cheese
1 tbsp. unsalted butter, melted

Recipe Directions for Parmesan Chicken

  1. Put a rack in the middle of the oven and preheat oven to 450 F. Line a baking sheet with parchment. Whisk together mustard, vinegar, salt, and 1/4 tsp. pepper in a large bowl. Add chicken, tossing to coat well.

  2. Pulse English muffins in a food processor until finely ground. Add cheese, butter, and remaining 1/4 tsp. pepper and pulse until well combined. Transfer to a shallow dish or pie plate.

  3. Dredge chicken one piece at a time in crumbs, coating completely and pressing gently so crumbs adhere, then transfer to baking sheet. Bake until golden brown and cooked through, 15 to 20 minutes.

  4. Note: the chicken can marinate in the mustard mixture, covered and refrigerated, for up to 2 hours.
