Recipe Ingredients for Parmesan Chicken with Penne

1 onion Yellow Onion
2 cloves, raw Garlic
2 oz dry Whole Wheat Penne
2 cup cooked Broccoli Florets
1 unit (yield from 1 lb ready-to-cook chicken) Chicken, Breast, Meat Only
4 oz Grated Parmesan Cheese
1 serving Extra Virgin Olive Oil

Recipe Directions for Parmesan Chicken with Penne

  1. 1) Cook pasta in boiling water until al dente, about tend minutes, or as label directs; add broccoli for final three minutes. Drain, reserving 1 cup cooking liquid. Toss pasta and broccoli with 1 Tbsp. oil.

  2. 2) Warm remaining oil in a skillet over medium-high heat. Add chicken, onion, and garlic, sprinkle with pepper; saute for five minutes. Add tomatoes; saute for two minutes. Toss in pasta, broccoli, Parmesan and 1/2c. of cooking liquid. Add more liquid if dry.
