Recipe Ingredients for Parm tomato risotto

1/3 cup arborio rice
2 1/2 cups chicken stock
1 tbsp parmesan cheese, grated
1/5 cup oil packed sun dried tomatos, chopped
2 tsp extra virgin olive oil
1/4 cup onion, chopped
1/2 tsp dried basil

Recipe Directions for Parm tomato risotto

  1. Heat the chicken stock. While the stock is heating, drain the tomatos and reserve the oil. Chop the tomatos coarsely and set them aside.

  2. In a large frying pan, heat 1 tsp of the oil from the tomatos. Add the onion and sautee until transleucent.

  3. Add the rice to the frying pan and stir until white spots appear in the center of the grains. Spoon a ladelful of stock into the pan and cook on low until the stock is absorbed. Continue adding the stock, one ladel at a time, until the rice is tender and the mixture is creamy.

  4. Add the cheese, tomatos, 1 tsp of the remaining oil, basil, and salt and pepper to taste. Mix well and serve.
