Recipe Ingredients for Parisian Rice Soup

2 tbsp sweet butter
1 cup leeks, white part only, split, washed and chopped
4 cups water
1 tsp salt
1/3 cup rice
1 1/2 cup potatoes, peeled, quartered, and thinly sliced
2 tbsp parsley, finely chopped

Recipe Directions for Parisian Rice Soup

  1. Heat a 2 quart kettle over low heat and gently melt the butter. Saute the leeks slowly until they are transparent and soft.

  2. Add water, salt, rice, and potatoes and simmer for 25 to 30 minutes. Test potatoes. They should be cooked but not falling apart.

  3. Add parsley.
