Recipe Ingredients for Pappa Al Pomodoro

1 tbsp olive oil
485 g crushed tomatoes
3 cloves garlic, minced
1 yellow onion, chopped
1/2 cup fresh basil
4 cups water
1 serving bouillon
1/4 tsp salt
1/2 tsp pepper
70 g french bread
1/4 cup parmesan cheese

Recipe Directions for Pappa Al Pomodoro

  1. Heat olive oil in a large pot over medium high heat. Add onions and stir frequently until translucent. Add garlic and let cook for another minute.

  2. Add in crushed tomatoes, water, and bouillon (can also substitute low sodium vegetable stock) and bring to a boil.

  3. Allow to simmer until thickened, about 15-20 minutes.

  4. Add in basil leaves, cut into strips, salt, and pepper. Allow flavors to combine for a minute or two. Stir in bread and allow it to absorb the extra water and continue to thicken.

  5. Remove from the heat, stir in the parmesan cheese, and serve.
