Leek stew with liver and cabbage sausages

Recipe Ingredients for Papet vaudois

700 grams Polska Kielbasa Sausage Link
60 grams Wine, Table, White
0.5 tsp Salt, Table
15 grams 100% Pure Canola Oil

Recipe Directions for Papet vaudois

Thinly slice the leek (white only), Then saute in oil in an heavy cast iron pot. When soft, add one small glass of dry white wine, then place, on top of the vegetables, one liver sausage (saucisse au foie) and one cabbage sausage (saucisse aux choux). Cover. Let cook on low heat for about 40 minutes. Pierce the underside of the sausages so that the juices mix in the vegetables. Serve immediately in warm plates with boiled potatoes (optionally, the potatoes can be added to the leek and cooked with the rest). This is a Swiss recipe, from Canton de Vaud (Lausanne). Eventually, kielbasa can be substituted to the Swiss sausages.
