Recipe Ingredients for Papaya Pineapple Muffins

1 1/2 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 cup pineapple, drained
1 cup papaya, canned and drained
1/3 cup yogurt, fat free, plain
1 egg, beaten
1/4 cup agave syrup
1/2 cup walnuts
1/2 cup dried cranberries

Recipe Directions for Papaya Pineapple Muffins

  1. Preheat oven to 375 degrees.

  2. In a large bowl whisk together dry ingredients.

  3. In a blender puree pineapple, papaya and yogurt. Mix in egg and agave. Pour into dry ingredients and fold till most of flour is moist. Add walnuts and cranberries and continue mixing till all flour is moist.

  4. Spoon batter into greased muffin tins. Bake 20-22 minutes. Cool on a wire rack.
