Recipe Ingredients for "La Panzenella" rosemary crackers

1 1/2 c flour
1/2 c water
1 t salt
1 pinch sugar
1 T rosemary
1/8 c olive oil

Recipe Directions for "La Panzenella" rosemary crackers

  1. Preheat oven to 450. Use ice cold water.

  2. Put flour, salt, and sugar in food processor. Pulse to blend. Add oil, pulse. Stream in water til dough comes together. Run 20 sec, put in rosemary during last 10 sec.

  3. Turn out dough and knead til smooth. Divide in 4 pieces and cover. Roll out with pasta machine til at thinest setting. Place on parchment paper, spritz with water and sprinkle with salt and pepper. Slide on baking stone and bake 1 min 45 sec, rotat and bake 1 min 30 sec, check and bake no more than 30 sc more. Cool on wire rake.
