Took the basic recipe from Rachael Ray, and added more stuff, changed the dressing a bit. Broil or toast the bread to make it less soggy.

Recipe Ingredients for Panzenella

3 tomatoes, large, seeded and chopped
1 cucumber, medium, seeded, chopped
2 celery stalks, chopped
2 carrots, shredded
1/3 c onion, red, sliced thin
1 c pepper, medium, orange or yellow, chopped
1/2 c pepper, red, chopped
1/8 c parsley, chopped
0.16 c apple cider vinegar
1/4 c olive oil
2 garlic cloves, minced
3 c bread, Italian, toasted, cubed
1 garlic clove
1 T butter

Recipe Directions for Panzenella

  1. Combine all the veggies and parsley. Put on a little salt and pepper.

  2. Combine the vinegar, oil, and minced garlic into a dressing. Pour onto the veggies.

  3. To make coutons out of the Italian bread: slice the bread and put it under the broiler until it's well toasted--not chewy. Cut the garlic clove and rub it on the warm toasted bread. Spread the butter on the slices. Let the bread cool before cutting into bite sized pieces. Add to the salad and mix well.

  4. Chill until ready to serve. The croutons will soften in the veggies and dressing, but since they're toasted they won't be soggy.
