This delicious, summery salad is perfect served with a lightly marinated chicken breast. Heirloom tomatoes are recommended for the best flavor and quality.

Recipe Ingredients for Panzanella Salad

2 cups tomatoes, medium dice - mixed variety is best (red, yellow, cherry)
1/4 cup red onion, medium dice
1/4 cup cucumbers, peeled and seeded, medium dice
2 cups croutons, medium size
1/2 cup vinaigrette dressing
2 tbsp fresh parsley, minced

Recipe Directions for Panzanella Salad

  1. Mix all ingredients except parsley and allow to rest so that the croutons absorb the dressing without getting too soggy.

  2. To Serve: Correct seasoning, garnish with parsley and serve.
