Panzanella is a traditional Italian bread and tomato salad. The addition of beans makes it hearty enough for a main course. This salad is best when made with vine-ripened tomatoes, but if they are out of season, purchase hydroponic or hothouse tomatoes.

Recipe Ingredients for Panzanella Salad with Beans

3 oz French baguette (1 small loaf)
4 tbsp extra virgin olive oil
1/2 tsp bottled minced garlic
2 large tomatoes, very ripe (about 1 lbs)
16 oz cannellini or great north beans
1/4 cup finely chopped red onion
2 tbsp chopped fresh basil (or 1 tsp dried basil)
2 tbsp balsamic vinegar
1/4 tsp salt
1/4 tsp black pepper, freshly ground
1/4 cup Asiago cheese, preshredded, or grated Parmesan cheese

Recipe Directions for Panzanella Salad with Beans

  1. Heat broiler. Cut bread into 3/4" cubes and transfer to a jelly roll pan. Combine 2 tbsp of the oil with the garlic and drizzle evenly. Toss lightly to coat. Broil 4"-5" from heat source for 3 minutes or until toasted, stirring once after 2 minutes.

  2. When bread is broiling, cut tomatoes in half. Working over a strainer placed in a bowl, squeeze the seeds and juice from the tomato halves into the strainer. Press seeds to extract and add to bowl of juices. Drain and rinse beans. Add beans, onion, basil, remaining 2 tbsp oil, vinegar salt and pepper to bowl and toss. Add toasted bread and toss lightly. Sprinkle with cheese

  3. Serving Suggestions: Serve with vegetable soup
