Italian bread salad, adapted from Ina Garten

Recipe Ingredients for Panzanella

3 tbsp extra virgin olive oil
6 cups bread, cubed
1 tsp kosher salt
8 cups green leaf lettuce, chopped
1/4 cup sun dried tomatoes, chopped
1 cucumber, diced
1 green pepper, diced
1/4 cup diced red onion
20 basil leaves, chopped
3 tbsp capers
1 clove garlic, chopped
1/2 tsp dijon mustard
1/2 cup extra virgin olive oil
1/2 tsp salt
1/4 tsp pepper
3/4 cup fresh mozzarella

Recipe Directions for Panzanella

  1. toss bread in olive oil and salt. Toast in 400 degree oven for 15 minutes or until golden.

  2. Whisk garlic, mustard, EVOO, salt, and pepper in large bowl.

  3. In bowl with dressing, toss rest of ingredients plus toasted bread. Serve immediately.
