20 oz. chicken breast fillets
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup orange juice
2 tablespoons honey
1 tablespoon Dijon mustard
1 teaspoon sweet paprika
1/2 teaspoon grated orange zest (optional)
1/4 teaspoon cayenne
1/4 teaspoon garlic powder
1 tablespoon unsalted butter, buttery spread, such as Earth Balance, or canola oil
1/4 cup chopped fresh cilantro, divided

Recipe Directions for Pan‐Seared Chicken Breasts In Spicy Orange‐Cilantro Sauce

  1. Pat chicken breasts dry and place between sheets of plastic wrap. With a meat mallet, pound a few times to flatten chicken slightly, but evenly, for faster, more even cooking. Sprinkle with salt and pepper. Let rest while preparing sauce.

  2. In a small bowl, whisk together orange juice, honey, mustard, paprika, orange zest, cayenne, and garlic powder. Set aside.

  3. In a heavy, large lidded skillet, heat the butter over medium‐high heat. Add chicken breasts and cook until lightly browned, about 5 minutes per side depending on size or until juice is no longer pink when centers of thickest pieces are cut. Pour sauce over chicken and sprinkle with 2 tablespoons of the cilantro. Cover with lid or tent of aluminum foil.

  4. Reduce heat to low and simmer chicken in sauce for 5 to 7 minutes. If chicken is done before you're ready to serve the meal, simply remove skillet from burner and let sit a few minutes up to 10 minutes with the lid to keep it warm. Transfer chicken to serving platter. Pour remaining sauce over chicken and sprinkle with the remaining 2 tablespoons cilantro.
